Story
High-Quality Local Kombucha from the Shiraka House

The Shiraka House, owned by Socfindo Conservation, was established to produce kombucha in a consistent and hygienic manner while also serving as a place for community empowerment. In this facility, all ingredients used for the second fermentation of kombucha come from the Socfindo Conservation garden, which grows various fruits, herbs, and plants used in the fermentation process. The ingredients are carefully selected for freshness and quality to ensure that the kombucha is safe and stable for consumption.
The workers in this production house are residents from the villages surrounding Socfindo Conservation. The facility provides them with opportunities to earn additional income, learn food production processes, and understand basic standards of cleanliness and fermentation. Daily activities include fermenting, flavor mixing, and packaging the final products.
Kombucha itself is known as a fermented tea beverage that contains probiotics. It is beneficial for digestive health, helps support the immune system, and offers a refreshing taste with mild acidity. The kombucha produced in the Shiraka facility goes through a second fermentation stage, where fruits or herbs are added to create more appealing flavor variations.
With the presence of the Shiraka House, Socfindo Conservation is not only providing a healthy beverage product but also creating local economic activity that involves the community. This approach helps increase household income, strengthens social connections, and demonstrates how local products can be developed with good quality and consistent standards.
